I’d like to talk to about Chinese dumplings. In Chinese we have lots of different words for the many different varieties of dumplings – so it’s not always easy to find an equivalent English word.
In Chinese there’s one kind of dumpling that we call ‘Jiaozi’ and these are a very popular dish during the Chinese New Year season.
The recipe for these dumplings varies by region but they typically consist of a minced meat and a vegetable filling wrapped into a thinly rolled piece of dough, which is then sealed by pressing the edges together. They are cooked by either boiling, steaming or my favourite by pan-frying. We traditionally serve them with a black vinegar and other sauces.
Even though we eat these dumplings throughout the year, at Chinese New Year we make them by hand, at home with our relatives. So for most Chinese people these dumplings are closely linked to the idea of Spring Festival traditions.
Personally I’m a huge fan of these dumplings and every Chinese New Year I get really excited about the prospect of sitting down with my relatives to make them. We spend hours making them and we often make jokes about who can make the best ones – the technique is a bit fiddly so sometimes they turn out wrong and this is always quite funny.
